I have recently stopped drinking milk and eating yogurt. I've been a lifelong vegetarian, but taking this extra step still made a difference. I noticed that I felt more alert, clean and energetic. After three months, my skin is clearing up a lot and I look slimmer. However, I still miss milky beverages and treats. So, I've been tempted by Blueprint Juice's cashew milk beverage at Whole Foods. It costs more than $10, though, so I decided that I needed to find a way to make it at home. Here's my recipe.
1 cup raw cashews (or almonds)
3 cups water
2 tablespoons agave or honey
1/2 teaspoon vanilla extract
1/4 teaspoon cinnamon
Place cashews in a bowl and cover with water. Let soak for at least eight hours and at most twelve.
Drain cashews, mix in the water and other ingredients and blend in a blender until it is smooth.
Strain through a sieve or cheesecloth.
Serve chilled.
